Puglia is mainly known for its olive oil. But almonds have always played a role that should not be underestimated. While most of the olive oil was exported, the almonds tended to stay in Puglia and made a career as “biscotti morbidi alle mandorle”, the soft biscuits with a bitter-sweet aroma, or as almond milk and almond syrup in “caffè leccese”. They were stored here in these rooms that now bear their Apulian name.
